Recipe: Maltese pork ribs in lemon and honey

Serves: 3


  • 1 kilo Maltese pork ribs, portioned

For the marinade: 

  • 100 ml beef stock
  • 3 peeled and chopped garlic cloves
  • 2  full tablespoons honey
  • Juice of one lemon
  • 1 teaspoon English mustard
  • 3 tablespoons ketchup
  • 3 tablespoons barbecue sauce
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon mixed herbs
  • 2 tablespoons olive oil
  • Fresh black pepper and salt


For the marinade: 

  1. Melt a beef stock cube in 100 ml hot water
  2. Add the honey and mustard,and stir
  3. Add the lemon juice
  4. Add all the other ingredients,and keep stirring
  5. Place the ribs in an oven dish, brush with olive oil and season with salt and pepper
  6. Spread the chopped garlic, all over
  7. Bake for approximately 1 hour 
  8. Take out of the oven and spread the marinade
  9. Bake for a further 20 minutes
  10. Serve with crispy bread, and vegetables of your choice
