- 450 g of extra large frozen raw shrimp, thawed, peeled and deveined
- 225 g of long grain rice
- 75 ml olive oil
- 1 medium onion, chopped
- 2-3 cloves of garlic, chopped
- 700 ml of chicken broth
- 400 g canned diced tomatoes
- 200 g canned whole Pimientos, drained and sliced
- 1 cup of fresh chopped Italian parsley
- A few threads of saffron
- Salt and fresh ground black pepper to taste
