Ingredients:
- 1 tbsp extra virgin olive oil
- 1 small onion, chopped
- 1 green bell pepper, chopped
- 2 carrots, chopped
- 2 stalks of celery, chopped
- 3 cloves chopped garlic
- 1 tsp ground cumin
- 2 tsp dried oregano
- 340 g shredded chicken
- 2 small zucchini, chopped
- 75 g frozen corn
- 1.5 l low sodium chicken broth or homemade stock
- 1 bunch coriander, stemmed
- 1 Serrano pepper
- Salt and pepper to taste
