Video recipe: General Tso’s Chinese chicken

Ingredients:

  • 950 ml vegetable oil for frying
  • 1 egg
  • 680 g boneless, skinless chicken thighs, cut into 1.5 cm cubes
  • 6 g salt
  • 4 g white sugar
  • 1 pinch white pepper
  • 130 g cornstarch
  • 30 ml vegetable oil
  • 20 g chopped green onion
  • 1 clove garlic, minced
  • 6 dried whole red chilies
  • 1 strip orange zest
  • 100 g white sugar
  • 0.4 g ground ginger
  • 45 ml chicken broth
  • 15 ml rice vinegar
  • 60 ml soy sauce
  • 10 ml sesame oil
  • 30 ml peanut oil
  • 5 g cornstarch
  • 60 ml water
