Ingredients:
For the pastry:
- 240 g all purpose flour
- 2 tbsp ghee (clarified butter)
- 1 tsp ground cumin
- Salt to taste
- ¼ tsp bicarbonate of soda or ½ tsp baking powder - optional
- 1 tsp lemon juice - optional
- 120 ml water or as needed
For the filling:
- 300 g potato, diced
- 1 tbsp oil
- 1 tsp cumin seeds
- 1 tsp turmeric powder
- 150 g onion, diced
- 150 g green peas
- 150 g cauliflower, chopped
- 75 g carrot, diced
- 1/2 cup soaked poha - optional (beaten rice found in Asian stores)
- 1½ tbsp ginger garlic green chili paste or as per taste
- 1 tsp Garam masala and red chilli powder
- Lemon juice
- 1/4 cup coriander leaves, finely chopped
- Salt
- Sugar to taste
