Video recipe: Authentic Indian potato and pea samosa

Ingredients:

For the pastry:

  • 240 g all purpose flour 
  • 2 tbsp ghee (clarified butter)
  • 1 tsp ground cumin 
  • Salt to taste
  • ¼ tsp bicarbonate of soda or ½ tsp baking powder - optional
  • 1 tsp lemon juice - optional
  • 120 ml water or as needed

For the filling:

  • 300 g potato, diced
  • 1 tbsp oil
  • 1 tsp cumin seeds 
  • 1 tsp turmeric powder 
  • 150 g onion, diced
  • 150 g green peas
  • 150 g cauliflower, chopped
  • 75 g carrot, diced
  • 1/2 cup soaked poha - optional (beaten rice found in Asian stores)
  • 1½ tbsp ginger garlic green chili paste or as per taste
  • 1 tsp Garam masala and red chilli powder 
  • Lemon juice 
  • 1/4 cup coriander leaves, finely chopped
  • Salt
  • Sugar to taste
