While blueberries don't naturally grow in Malta, we can find them for sale at most fruit and veg sections at major supermarkets, and can be used in recipes like this one prepared by Laure Vitale from Laura in the Kitchen. You may also opt to replace the blueberries with other fruit, like apples.

Ingredients:
For the Crust:
- 2-1/2 cups of All Purpose Flour
- 1/4 cup of Granulated Sugar
- 1-1/2 tsp of Lemon Zest (the yellow part of the lemon peel, grated)
- 1/4 tsp of Salt
- 1 Envelope of Vanillina or 1 tsp of Vanilla Extract
- 1/2 Envelope of Pandegliangeli or 1-1/2 tsp of Baking Powder
- 3/4 cup of Unsalted Butter, cold and cut into bite size pieces
- 1/4 cup of Vegetable Shortening, cold and cut into bite size pieces
- 3 Egg Yolks
- A few Tablespoons of Ice Water
For the Filling:
- 4 cups of Fresh Blueberries
- 1/4 cup of Vanilla Sugar or Regular Granulated Sugar
- 2-1/2 Tbsp of Cornstarch
- Zest of 1/2 of a Lemon
- 2 tsp of Lemon Juice
- 1/8 tsp of Salt
