Recipe: Mince pies with carob syrup

Ingredients:

Filling:
200g sultanas
200g mixed fruit
100g cranberries
1 apple
2 oranges
1 teaspoon cinnamon
1 spoon carob syrup
2 orange rinds
1 tsp ground mixed spice

Pastry:
300g plain flour
100g butter
2 spoons carob syrup
1 lemon rind
1 tsp ground mixed spice
Some water to bind

Glazing:
Egg with a sprinkle of sugar

Method:

Filling
1. Peel and chop the apple finely. Squeeze the oranges. Grate the orange rinds.
2. Put the sultanas and mixed fruit in a bowl. Add the chopped apple, orange rinds, orange juice and ground mixed spice and mix well.
3. Leave well-covered to marinade in the refrigerator for two days or in sterilised tightly-closed jars.

Pastry
4. Sift the flour. Rub in the margarine.
5. Add the sugar, lemon rind and ground mixed spice and other ingredients. Mix well.
6. Add water and bind to form dough.
7. Leave to rest in the refrigerator for some hours before using.

Forming the pies
8.Preheat oven at temperature of 200oC.
9.Prepare the bun tin with spraying oil and sprinkled flour.
10.Open the pastry on a floured surface and cut out circles. Line the bun tin with the pastry circles and level with the mince meat filling.
11.Cover the top of the pies with pastry shapes.
12.Glaze with milk and bake for 20 to 30 minutes or until golden brown.
13.Serve warm or cold with a dash of icing sugar.
