These meatballs are perfect for serving with drinks or a glass of wine in the summer, hot or cold, with toothpicks and dips to accompany.
Ingredients:
For the meatballs:
- 400g minced pork & beef
- 6 tablespoons breadcrumbs
- 1 egg
- ¼ cup chopped tomato
- 1 tablespoon chopped coriander
- 1 tbs cumin powder
- salt and pepper
For the sauce:
- 1 cup chopped tomato
- 1 spring onion, chopped
- 1 tsp crushed dried chilli
- 1 clove garlic, chopped
- 1 tsp chives
- 2 tbs olive oil
Instructions:
For the meatballs:
- Beat egg in a bowl and mix all ingredients.
- Stir well and form rather small meatballs.
- Place in a metal baking tray and sprinkle with oil.
- Bake at 200C for 10-15 minutes.
For the sauce:
- Heat oil in a frying pan and fry spring onion, garlic and chilli.
- After 5 minutes add other ingredients and lightly fry for 10-15 minutes.
Serve: meatballs hot on a plate or dish, accompanied by sauce in a bowl.
