Ingredients:
- 2 lbs. ground beef
- 1/2 cup crushed saltine crackers (you can try TUC originals too)
- 1/4 cup ketchup
- 2 eggs, beaten
- 1/2 cup chopped onion
- 1/2 cup chopped bell pepper
- 1 tsp. salt
- 1/4 tsp. thyme
- 1/4 tsp. marjoram
- another 1/4 cup ketchup
Method:
- Preheat oven to 175 C.
- Combine ground beef, cracker crumbs, 1/4 cup of ketchup, eggs, onions, peppers, salt, thyme and marjoram in a large bowl and mix well.
- Shape mixture into a loaf.
- Bake at 175 C for 45 minutes, remove from the oven and spread the remaining 1/4 cup of ketchup on the meatloaf.
- Return meatloaf to oven and bake for 15 minutes more. Enjoy!
