Recipe: Fresh strawberry and vanilla cake

  • 225 g self raising flour
  • 225 g caster sugar
  • 3 beaten eggs
  • 1 tsp baking powder
  • 2 tsps vanilla essence
  • 180 ml sunflower oil
  • Half a tsp table salt
  • A little milk as necessary
  • 200 g fresh strawberries, cut to your fancy and dusted in icing sugar
  • 50 g icing sugar to decorate


  1. Sift the flour with the baking powder and salt and add the oil and work with your hands until it becomes like fine bread crumbs
  2. Add the sugar, beaten eggs and vanilla and if it looks a bit stiff, add a little milk until smooth
  3. Fold in the dusted strawberries
  4. Pour into a 30 cm by 25 cm tray and bake at 180-200 c for 25 min
  5. Leave to cool and dust with icing sugar
