Traditional Maltese Recipe: Barbuljata (scrambled eggs Maltese-style)



  • 8 eggs
  • 1 onion, finely chopped
  • 4 small tomatoes
  • Olive oil
  • Salt and pepper



  1. Fry the onion in oil, adding the peeled and finely chopped tomatoes (seeds removed). 
  2. Stir while simmering for 5 minutes, add the beaten eggs, season and keep stirring until cooked. 
  3. Serve with galletti or toast.
