Recipe: Apple galette

A galette is a French term signifying a flat cake and, indeed, by the end of this recipe you will have made a number of flat rectangles of golden puff pastry topped with a layer of frangipane (almond cream) and slices of lightly sweetened apples. This video for apple galettes by Stephanie Jaworski, of Joyofbaking, is very detailed, so you can follow as you go. The ingredients you will need are below:

Quick Puff Pastry:

  • 1 3/4 cups (225g) all purpose flour
  • 1/2 teaspoon (2g) salt
  • 1 cup (225g) cold unsalted butter, cut into large chunks
  • 1/2 cup (120ml) ice cold water

Frangipane (Almond Cream):

  • 1/2 cup (60g) blanched almonds
  • 1 tablespoon (10g) all purpose flour
  • 1/8 teaspoon salt
  • 1/4 cup (50g) granulated whitesugar
  • 4 tablespoons (55g) butter, at room temperature
  • 1 large egg, at room temperature
  • 1/2 teaspoon pure vanilla extract

Filling:

  • 900 grams Granny Smith apples or other firm textured apple
  • 2-3 tablespoons (40g) granulated white sugar
  • 1/8 teaspoon ground cinnamon (optional)

Garnish:

  • Icing sugar
