Video recipe: Vegetarian Moussaka

Moussaka is an aubergine and potato-based dish typical in the cuisines of the former Ottoman Empire, such as Greece, that comes in many variations. Barry Lewis, in his video by MyVirginKitchen, demonstrates how quick and easy it is to make a delicious vegetarian moussaka that is so tasty that it is a must-try for meat lovers too. The ingredients are below.

Ingredients:

  • 2 courgettes, sliced thinly
  • 5 tomates, chopped in small chunks
  • 1 aubergine, sliced thinly
  • 1/2 tin (200g) kidney beans (drained)
  • 1/2 tin (200g) borlotti beans (drained)
  • 350g new potatoes, sliced
  • 2 peppers, thinly sliced
  • handful fresh basil
  • 1tbsp olive oil
  • 250g natural yoghurt
  • 1 egg, beaten
  • 80g parmesan cheese
  • cinnamon, salt & pepper to flavour and season to your liking (a good amount of pepper is recommended)
