Video recipe: Quick and easy vegetable soup

Here's a delicious soup that is low in calories but high in flavor. It includes several vegetables such as carrots, potato, celery, tomatoes, green beans and fresh corn to make it very nutritious and ideal for a cold winter's night. Serve with crusty bread for a complete week night dinner. Try using vegetable broth to make this soup vegetarian.


  • 400 ml chicken broth
  • 322 g tomato-vegetable juice cocktail
  • 235 ml water
  • 1 large potato, diced
  • 2 carrots, sliced
  • 2 stalks celery, diced
  • 410 g diced tomatoes
  • 110 g chopped fresh green beans
  • 155 g fresh corn kernels
  • Salt and pepper to taste
  • Creole seasoning to taste
