Recipe for tomato soup

Tomatoes are always available aplenty here in Malta, and while we are accustomed to using them lavishly in salads and in sauces with all kinds of other foods, we may not be as quick to make tomatoes the main ingredient of our meal. Try this quick and easy recipe for tomato soup as shown in this video by Nicko from Nicko's Kitchen. The recipe uses canned tomatoes, however you can try blanching fresh tomatoes and decide which flavour works best for you.

  • 2 brown onions, diced
  • 3 cups canned whole tomatoes 
  • 1/4 cup tomato paste
  • 1 cup fresh basil leaves
  • 1 tsp tobasco sauce
  • 2 1/2 cups vegetable stock
  • salt & white pepper to season
