This mixed appetizers platter is ideal as a shared starter or to enjoy with a glass of wine with friends. It combines cold meats and vegetables with dips and crackers, but feel free to change the menu according to your preferences.

Serves: 8 persons

Ingredients:

  • A bunch of asparagus, cleaned
  • 100 g prosciutto, cut in half lengthwise
  • Olive oil to spread
  • 100 g each of the following:
    • black olives
    • artichoke hearts
    • roasted eggplant
    • roasted capsicum
  • Crackers to serve

For the basil dip:

  • 125 g cream cheese
  • ½ cup basil pesto
  • 2 tbsp lemon juice

For the bean dip:

  • 400 g canned butter beans, drained and rinsed
  • 2 tbsp lemon juice
  • 1 garlic clove, crushed
  • 2 tbsp olive oil

Instructions:

  1. To make the basil dip: place the cream  cheese, pesto and lemon juice in a food processor with a tablespoon of water and blend until the mixture is smooth and well-combined. Place the mixture into a bowl.
  2. To make the bean dip: place the beans, lemon juice, garlic and 1 ½ tbsp of the oil in a food processor and blend until the mixture is smooth and well-combined. Place the mixture into a bowl and sprinkle with the remaining olive oil.
  3. Arrange the asparagus, prosciutto, olives, artichoke hearts, eggplant and capsicum on a large plate and serve with the dips and crackers.
