Recipe: Meatball soup

This is an easy recipe for those cold days of winter, a one-pot-wonder meal that includes meat, vegetables and pasta in a soup.

Serves: 4

Ingredients:

  • 500 g minced beef
  • 1 small red onion, finely chopped
  • 2 cloves of garlic, crushed
  • ½ cup fresh breadcrumbs
  • 1/3 cup fresh basil leaves, chopped 
  • 1/3 cup Parmesan cheese, grated
  • 1 egg, lightly beaten
  • 600 g tomato puree
  • 4 cups chicken stock
  • ½ cup small pasta
  • 2 marrows, cut into cubes
  • 150 g green beans, remove points and cut into three
  • 1/3 cup Parmesan cheese, grated
  • Fresh crusty bread to serve.

Instructions:

  1. Combine the meat, onion, garlic, breadcrumbs, 1/3 cup parmesan and egg in a large bowl; sprinkle with salt and pepper. Form small balls out of the mixture and place on a plate or clean surface.
  2. Pour the tomato puree in a large saucepan and add the stock and 2 cups of water. Place on a high heat until it boils; collect the froth from the surface.
  3. Place the meatballs inside and bring to the boil again. Reduce to a simmer for ten minutes uncovered. 
  4. Add the pasta and simmer for another 5 minutes.
  5. Add the marrows and the beans and allow to cook for 5-7 minutes or until the vegetables are cooked.
  6. Serve the soup with Parmesan sprinkled on top and fresh, crusty bread.
