Recipe: Lasagna Bolognese

If you are a pasta-lover you will probably agree that lasagna is one of the most delicious pasta preparations possible. It may feel a bit daunting to make, however it is really worth the effort to make it. It is easy with this video recipe by CookingwithSugarTV. If you prefer, you can also use lasagne sheets that do not require any precooking; the rest of the recipe stays the same. 

Ingredients:

For Meat Sauce (Bolognese Sauce):

  • 450g of dried lasagna, cooked al dente
  • 450g of ground beef
  • 450g of ground veal
  • 450g pork sausage, removed from casing
  • 2 tablespoons olive oil
  • 1 medium-sized onion, chopped
  • 4 garlic cloves, finely chopped
  • 1 celery stalk, finely chopped
  • 1 carrot, peeled and finely chopped
  • 170g canned tomato paste
  • 2 (800g) cans crushed tomatoes
  • 1 cup red wine
  • 2 cups beef stock
  • 2 dried bay leaves
  • 1/2 cup fresh chopped basil or 2 teaspoons dried basil
  • Salt and freshly ground black pepper
  • 1 teaspoon sugar
  • Sprinkle of red pepper flakes (optional)

For Ricotta Filling:

  • 900g whole milk ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup chopped fresh parsley
  • 2 eggs
  • Salt and pepper

For Topping and Filling:

  • 450g mozzarella, shredded
