Recipe Gingerbread cake squares

Gingerbread men are the classic, but they are not the all-in-all when it comes to ginger-flavoured goodies. This cake is quick and easy to make and can be cut into squares to make the individual portions. 

Ingredients: 

  • 150 g butter
  • 175 g soft brown sugar
  • 1 tbsp treacle
  • 225 g self raising flour
  • 1 tsp baking powder
  • 1 tsp bicarbonate of soda
  • 2 tsp ground ginger
  • 1 tsp nutmeg
  • 150 ml skimmed milk
  • 2 eggs beaten
  • Orange zest (grated rind of an orange)

 Method: 

  1. Preheat oven to 170 C.
  2. Grease a 23 cm square cake tin or line with baking paper.
  3. Melt the butter and dissolve the sugar in a saucepan over low heat, then add the treacle and leave to cool.
  4. Sieve the flour, baking powder, bicarbonate and spices in a bowl.
  5. Stir in the milk, beaten egg and cooled down liquid mixture. 
  6. Mix gently together and pour the batter into the cake tin.  
  7. Bake for 35 minutes or until a fine skewer inserted in the centre comes out clean.
  8. Allow to cool, cut into squares and serve.
