Recipe: Chocolate pork ribs

Ingredients:

For the ribs:

  • 1/2 a cup Cadbury cocoa
  • 1/2 cup brown sugar
  • 5 tbsp Remia Gold margarine
  • 2 tbsp chili powder
  • 2 tbsp salt
  • 1 tsp ginger powder
  • 1 tbsp garlic powder
  • 1 tbsp mustard powder
  • 2 tsp cinnamon powder
  • 1 tsp chinese all spice
  • 2 racks of ribs

For the sauce: 

  • 3 tbsp olive oil
  • 1 LARGE garlic clove crushed
  • 1 chili crushed
  • 3 tbsp worcestershire sauce
  • 2 tbsp soy sauce
  • 100g kunserva
  • 10 blocks of Cadbury Bournville chocolate 
  • 3 tbsp brown sugar
  • 3 tbsp water

Instructions:

For the ribs:

  1. Mix all the ingredients together and set aside a handful of mixture. Rub the rest generously all over the ribs.
  2. Cover and leave to sit in the fridge for a minimum of 2 hours.
  3. Heat your oven to 160 celsius and line a dish with foil.
  4. Sprinkle the reserved rub mixture over the ribs and then put in the centre rack for about 2 hours.
  5. They come out super super tender and you can just pull them apart.

For the sauce:

  1. Heat the olive oil in a pan and add the chilli and garlic.
  2. Fry gently for about 30 seconds until the garlic becomes fragrant.
  3. Add the rest of the ingredients and stir to make a thick sauce.
