- 8 eggs
- 1 onion, finely chopped
- 4 small tomatoes
- Olive oil
- Salt and pepper
- Fry the onion in oil, adding the peeled and finely chopped tomatoes (seeds removed).
- Stir while simmering for 5 minutes, add the beaten eggs, season and keep stirring until cooked.
- Serve with galletti or toast.
