When we hear the phrases "Christmas lunch/New Year's lunch" or "I have guests" we imagine lots of work, planning and perfection. But this should not daunt us as with the right planning and preparation, everything should run smoothly. In this season, we share not only food and gifts, but also the company of friends and family, then a Christmas gathering should be a pleasant, not stressful, experience.

If you are planning a meal, keep in mind these points to success:

  1. First pick your main course, then all the other dishes around it to create a suitable balance. Keep in mind that variation, taste, colour and texture are key to a successful meal.
  2. Choose recipes that you know you are able to carry out, and preferably which you have already tried before. Ask your guests whether any of them have any allergies or foods they simply do not like.
  3. Plan your time. Particularly look at the time you will need on the day to heat up foods that have been prepared in advance, and to make the finishing touches.
  4. Do your shopping early so you will be able to find all the ingredients you need and not have to change your original plan, and you will also have time for items you may have forgotten.
  5. Include both hot and cold plates so that you can prepare some in advance.
  6. There is no need to cook everything. Smoked salmon, smoked ham and other cold meats served with a fancy salad are also an excellent first course.
  7. See that you have enough crockery and cutlery for everyone.
  8. See that you have a selection of drinks that are suitable for before, during and after the meal. Also ensure you have chilled drinks to be served cold in advance.
  9. To save time, and to be able to enjoy your guests' company, do not be fussed about buying ready made items, such as mixed green salad, sauces and dessert. And if your guests offer help, accept it with a smile!
